Last night I had dinner with my dad and made one of his favorite meals: quesadillas. I made two kinds, one with tumeric-spiced pulled chicken, red bell peppers and cilantro, the other with spicy black beans, zucchini, yellow squash, corn and red onions, layered in sprouted whole wheat tortillas and sharp shredded cheddar. I made the fillings separately sauteed in a pan and then fried the tortillas in a bit of butter until they were golden brown.
Today for lunch I ate the leftovers but with the filling on the outside, a plain cheese quesadilla and with a big salad: romaine letter + bell peppers with lime juice and tons of black pepper. Nothing is simpler or more satisfying.
