Not the most photogenic of dishes, perhaps, but certainly one of the most satisfying pasta dishes: orecchiette (a pasta I only like to eat at lunch for some reason) + fried garlic + green onions + quartered artichokes + grated pecorino + salt + pepper (lots of it) + freshly squeezed lemon (even more of it) + a tablespoon or so of starchy pasta water. Makes the perfect slick sauce, every time. Although it may not look like much — it’s not a showboat dish like fresh tomatoes + basil — trust that it is tangy, bright + really sticks-to-your-ribs-good.
